Whether serving the City Hall’s famous pancakes, traditional Danish open sandwiches or hot lunch dishes, employees and visitors at Copenhagen City Hall can now dine in a canteen that has documented its efforts to reduce its overall environmental and climate impact.
The Copenhagen City Hall canteen has achieved the Nordic Swan Ecolabel, the official Nordic environmental certification.
The certification requirements include a higher share of organic ingredients, at least one vegetarian meal option, systematic efforts to prevent food waste, reduced energy and water consumption, and limitations on unwanted chemicals used in areas such as cleaning and dishwashing.
Compass Group operates the canteen and has worked closely with the City of Copenhagen to achieve the certification. The process required extensive documentation, new operating procedures and a significant effort from the kitchen team.
“We are proud to have achieved the Nordic Swan Ecolabel together with the City of Copenhagen. The certification demonstrates that the Copenhagen City Hall canteen meets some of the industry’s highest environmental standards in areas including ingredients, food waste reduction, waste management and resource consumption.
At the same time, the certification shows that it is possible to deliver high-quality dining experiences while meeting ambitious environmental requirements. Many of the criteria are closely aligned with the way we already work on a daily basis, and the certification now provides independent verification of those efforts.
