Compass Group Chef Receives International Recognition for Reinventing a Danish Classic

What happens when a traditional Danish beef stew meets modern gastronomy?

For Charlie Heglund, Food Innovation Manager at Compass Group Denmark, it has resulted in a place in a new international cookbook developed through the EU co-funded FoodChoices4LIFE project in collaboration with one of the project’s partners, Worldchefs – World Association of Chefs’ Societies.

Together with 29 other chefs from across Europe, Charlie was selected to contribute to the project. In total, seven chefs from Compass Group across Europe have contributed to the cookbook, with the goal of reimagining traditional local dishes.

Charlie’s plant-based interpretation of the classic Danish dish millionbøf is among the featured recipes. Danish-grown legumes, peas and lentils take centre stage, without compromising on flavour.

The selection recognises Charlie’s culinary expertise and the innovative mindset that defines the Food Innovation team at Compass Group Denmark. Every day, the team works to develop and improve the meals served in our staff restaurants across the country.

For Charlie, the recognition means a great deal:
