Compass Group competes for the Green Canteen Menu of the Year 2026

Compass Group has been selected to compete for the title Greenest Canteen Menu of the Year 2026 in a new nationwide competition organised by Landbrug & Fødevarer

The competition highlights canteens that succeed in creating green meals where the food delivers both great taste and everyday enjoyment. According to Landbrug & Fødevarer, being selected is in itself a recognition:

“There have been many fantastic nominations, so being selected is in itself a mark of quality.”

Leading the team is Niclas Grønhøj Møller, Head Chef of Compass Group’s canteen at DR in DR Byen, who together with two colleagues will represent Compass Group in the final. The team will present a menu inspired by the plant-based concept Wicked Rabbit, which forms the foundation of the daily meals served in DR Byen.

For Niclas, however, the goal is not to make the green aspect a point in itself. It is about professional responsibility, curiosity and moving guests through flavour and familiarity:

“Our goal is to inspire guests by presenting something that is delicious and appealing – something that makes them want to move in a new direction. It’s not about saying: This is green, so you should eat it. It’s about saying: This is delicious, so you should eat it and by the way, it’s also green.”

The final will take place as a cook-off on 23 March 2026 at Foodexpo in Herning, where the winner will be decided by a professional jury.
