Legumes Take Centre Stage at the University of Copenhagen During Nationwide Campaign

How can we encourage more Danes to eat legumes? A good place to start is on the plate. That was the idea behind our initiative in week 43, when we put extra focus on legumes in several of our canteens at the University of Copenhagen.

Throughout the week, guests could enjoy a variety of dishes featuring legumes and find inspiration for incorporating them into their everyday meals.

The initiative was part of a nationwide campaign by the Danish Legume Partnership, which brought together more than 90 companies, organisations and institutions to encourage Danes to put more legumes on their plates. From supermarket shelves to canteens across the country, the campaign highlighted beans, lentils and the many ways they can be used in the kitchen.

“We want to offer our guests varied food and great dining experiences. That is why it was a natural choice to support the campaign, which gave us an opportunity to show how familiar ingredients can be used in new ways,” says Sussi Karin Reimer, Site Manager at the University of Copenhagen.

Our local kitchen teams were behind the dishes, ensuring that legumes had a place on the menu. Hopefully, the guests were also inspired to incorporate more legumes into their own cooking.
