Søndre Campus leads the way towards greener choices

At Søndre Campus, which includes the Faculty of Law, the meat percentage, i.e., the proportion of meat in the total procurement, has been successfully reduced from 11.4% in 2021 to 4.8% in 2023 within two years

20% of Denmark’s CO2 footprint comes from our food, with meat being a major culprit,” reveals a new report from the green think tank CONCITO. According to the think tank, Denmark’s per capita climate footprint is among the world’s largest, calling for action.

How have we managed to come this far at Søndre Campus?

– A completely vegetarian concept, Wicked Rabbit, was created, starting in a smaller kitchen at Søndre Campus and now expanding to the two largest cafeterias. Since then, the concept has also been introduced at other educational institutions, including DTU – Lyngby.

– The success achieved at Søndre Campus has only been possible due to the strong support from the university over the years. A big thank you to, among others, Kristian Boye Petersen and Søren Höffner for supporting the concept and contributing to sustainable development.

– Last but not least, our many talented staff have constantly explored new ways to develop exciting and delicious vegetarian dishes, making Wicked Rabbit the students’ preferred dining choice. Special commendation goes to the gastronomic site manager Laila Bjerregaard and marketing manager Esben Luplau, both of whom have been involved since the beginning. And of course, thanks to the many skilled chefs and other kitchen staff over the years.
