It was a pleasure to welcome Carsten Olsen, also known as The Bald Chef, to our canteens at Lundbeck in Valby and Lumsås as a guest chef.
The visit is one of the culinary highlights of the year, which we at Compass Group plan in close collaboration with our client Lundbeck to create a special dining experience with well-known chefs and culinary profiles.
This time, the guest was Carsten, who trained at Hotel d’Angleterre, is a cookbook author and widely known from television as a communicator of gastronomy.
During his visits, he helped put his own mark on the day’s three dishes. What made the biggest impression on him, however, was the atmosphere, the collaboration and engagement in the kitchens, as well as the joy and sense of indulgence the canteen visit created for the guests.
After the visit, he shared his experience on LinkedIn:
“First and foremost, the professionalism and commitment shown by the two managers and not least the staff were truly inspiring. Food prepared with love for the ingredients, respect for the craft and for the guests who use the canteens every day. In Valby alone, up to 1,400 people are served daily, with a selection that would make most restaurants pale in comparison.”
He also highlighted the special culture, writing that what impressed him the most was the ambition that everyone should feel good and welcome.
The visit once again showed how much a guest event can strengthen the sense of community. When new chefs step into the kitchen, a special dynamic emerges.
