We have purchased 100 m² of land as our own social and organic haven

The first dig has been made in our newly acquired garden at Grantoftegård in Ballerup. This garden will serve as a place where Compass Group colleagues can meet to have discussions outdoors or bring our trainees to show how we work with the land and the challenges that come with it.

Close to nature and the seasons

On our new piece of land, we will observe the changing seasons and how the weather affects our crops. We will get closer to understanding how earthworms work for us in the soil and how we can make better choices about local, seasonal produce.

We aim to gain knowledge to share with each other, generate new ideas, inspire one another, and use our crops to develop and test new flavors that can be used in our kitchens, ultimately benefiting our guests.

A community

“The idea of having our own garden at Compass Group is to create a small but realistic picture of the conditions under which vegetables are grown. This way, we can share with our colleagues why our selection of produce changes if we experience impacts from drought or extremely wet weather.

We can also use it to show tips from ‘grandma’s garden,’ and how things were done in the past when there was an abundance of certain crops, and it was necessary to pickle, preserve, or ferment to extend the shelf life of produce and enjoy it throughout the year,” says Ulrik Nielsen, Manager of our Food & Excellence team.

Sine Andersen, Head Chef and a member of our Culinary Council, which helps inspire and challenge our kitchens, is responsible for tending our land and ensuring optimal land use.

However, as an employee of Compass Group, you are always welcome to drop by to take part in the development of our land, discuss culinary values outdoors, or harvest vegetables.

As the saying goes: You need to get your hands dirty to understand the plants.
